Recipe: Creamy Shrimp & Crab Enchiladas

This was my first attempt at making homemade enchiladas and wow these were amazing!
Ingredients:
Meats:
1lb of cooked shrimp (I used jumbo shrimp for mine, so it was only a half lb.)
6 oz of claw crab meat
Veggies:
.5 oz of scallions chopped
half a bell pepper (your choice of color)
1 jalapeno chopped
2 cloves of garlic
Sauce/Topping:
1 c of shredded Mexican cheese, split in half
3 TSP of sour cream
3 oz of heavy whipping cream
3 TBL of butter
Seasoning:
Cumin to Taste
Chili powder to Taste
Garlic powder
Black pepper
(You won't need salt with the seafood and other spices)
or you can just use taco or fajita seasoning but I like to make my own
Flour or corn tortillas
In a saucepan, drop in your 2 tbsp. of butter and then add in your peppers, garlic, once the veggies soften a bit add in the crab meat. Add in your seasonings next. Stir it all together and then add the sour cream, heavy whipping cream, and half of the shredded cheese. This will create a creamy sauce.
Next, sauté the shrimp in the remaining tbsp of butter and additional seasoning just to warm it up.
Then drop some of the shrimp into your tortillas and spoon in some of the creamy sauce. Then roll the wrap closed and place in a ungreased backing dish. Once the wraps are in the pan, pour some additional sauce over the top of the wraps. Cover the top with the remaining shredded cheese and sprinkle on some chopped scallions. Bake on 350 degrees for about 15-20 minutes or until the cheese is melted to your desired taste.

There are other things that could be added to this to jazz it up. Black olives or extra sliced jalapeno on top. Salsa or queso cheese would also be good for adding some alternative flavors. It is definitely one of the recipes that can be modified for personal taste.
